Stand in any cookware aisle — or scroll any listing page — and the choice looks impossible. A cast iron kadai your grandmother would approve of. A gleaming triply stainless steel set that costs as much as a mixer-grinder. A hard-anodized pan promising nonstick convenience without the guilt. Every one of them claims to be the last pan you'll ever buy.
Here's the honest way to settle the cast iron vs. triply stainless vs. hard-anodized debate: stop comparing spec sheets and start comparing your actual week. Daily tadka at smoking-hot temperatures. Tomato-onion gravies that simmer for forty minutes. Tamarind rasam. And, increasingly, an induction cooktop in a flat where the gas cylinder is the backup, not the default.
Run all three materials through those four tests and a clear pecking order emerges — with one upset result most brands would rather you didn't notice.
Triply stainless steel is the best single choice for daily Indian cooking: it handles high-heat tadka, acidic tomato and tamarind gravies without reacting, and works on every induction cooktop. Cast iron beats it for dosa and deep-frying but reacts with acids; hard-anodized often fails on induction and its coating dislikes tadka heat.
Round 1. The Daily Tadka Test:

Cast iron — Acid attacks the seasoning layer and then the iron beneath it. Hard-anodized — Genuinely decent here, with an asterisk. The anodizing process thickens aluminium's natural oxide layer into a hard, non-reactive shell, so intact pans handle tomato gravies safely. The problem is the word intact. A steel spatula scratch or a worn patch of coating exposes raw aluminium, and raw aluminium plus acid is exactly the combination you bought the pan to avoid. Triply stainless steel — Lowest effort of the three. Soap, soaking, steel scrubbers, dishwashers — nothing hurts it. Turmeric stains and rainbow heat-tint wipe away with a paste of vinegar or a pinch of citric acid. The one skill it demands is technique: preheat properly and food releases; throw paneer into a cold pan and it welds on. That's a two-week learning curve, not a flaw.
Hard-anodized — Easy care with a countdown timer. No rust, light weight, quick cleanup — but the interior coating is the pan. Metal spatulas, steel wool, and high-heat tadka all shorten its life, and once the coating fails, the pan is finished; there's no re-seasoning an anodized surface. Budget for replacement every two to three years and it's fine. Expect an heirloom and you'll be disappointed.
The price-per-year math nobody does at checkout:
Sticker prices mislead because the three materials age on completely different clocks. A decent 24 cm triply kadai costs ₹2,000–3,000 and lasts 15–20 years with zero technique beyond drying it. That works out to under ₹200 a year. A hard-anodized kadai at ₹1,200–1,800 looks cheaper, but on a two-to-three-year coating lifespan you'll buy five or six of them across the same period — call it ₹400–600 a year, for the pan that also can't do tadka properly.
Cast iron breaks the graph entirely. A ₹700–1,200 kadai from any of the Indian foundry brands, maintained with thirty seconds of oiling after each wash, is effectively a one-time purchase. The catch is the cost you pay in kilograms instead of rupees: a 26 cm cast iron kadai weighs 3–4 kg loaded, which matters enormously if an older parent does most of the cooking, or if your wrists already complain about the pressure cooker. Triply gives you 80% of the longevity at half the weight.

Cast iron tawa and tadka pan — Dosa, roti-crisping, shallow-frying, and twice-daily tempering. These two see high heat and zero acid, which is cast iron's exact comfort zone — and the incidental iron in your food is a quiet bonus.
One coated pan, treated as disposable — Eggs, cheela, and low-heat breakfast jobs where nonstick genuinely earns its place. Buy mid-range, use silicone tools, keep it off tadka duty, and replace it without guilt when it wears.
Notice what's missing: a full hard-anodized set. As a category it isn't bad — it's mispositioned. It's sold as the everyday all-rounder, and the everyday Indian routine of high-heat tempering, acidic gravies, and induction cooking attacks its three specific weaknesses.

Hard-anodized survives as a budget nonstick option for gas-stove kitchens that go easy on the heat — a fine third pan, a poor only pan.
